I have an app on my phone that tracks it, but my cycles lately have been all over the place. Whats the best way to detect that its time to do the "deed", other than tracking?

You can get ovulation predictor kits which you may find more helpful.
I would say that the best way to detect your fertile window each month is to look out for the natural signs of fertility. You can read about this in detail in this post written by Kate (who is one of our senior members). She writes:
'The day before and the day of ovulation, your cervical mucus will be clear and wet and it will have the consistency of egg white. You will be able to pick it up and stretch it between your thumb and fore finger and it may not break even if you stretch it 6 inches. This is when you are at your peak of fertility and sex at this time gives you the best chance of conception.'

I followed the method that LJ mentioned above, checking cervical mucous daily and charting.
The cervical mucous check is a awesome way to follow your bodies clues and signals.
